My late great-grandmother loved sweets but she had a soft spot for apple fritters. Those were her favourite! Her birthday would have been just around the corner and I couldn’t think of a better way to mark the special occasion than to share my Apple Fritter Bread recipe.
This sweet treat is incredibly moist, perfectly spiced and full of BIG apple flavour. As it bakes, the aroma of warming spices and apple fill the kitchen. What could be better?! It’s topped with a generous drizzle of glaze, which gives this dessert a signature apple fritter donut-like feel.
My quick bread is made using a single bowl, a whisk and a few simple ingredients, most of which you would already have at home. In just over 60 minutes, you’ll have yourself a delicious treat! Ingredients:
Apple Fritter Bread
1/2 cup granulated sugar
1/4 cup brown sugar, packed
2 eggs
1 tsp vanilla extract
1/2 cup 2% milk
1/2 cup avocado oil (See Notes below)
1 1/2 cups all-purpose flour or gluten-free flour (such as Cup4Cup's Multipurpose Gluten-Free Flour)
1 1/2 tsp baking powder
3/4 tsp baking soda
Pinch of ground nutmeg
Apple Filling
2 2/3 cups Honeycrisp apples, peeled and diced into 1/4 inch pieces (approx. 2 large apples) (See Notes below)
2 Tbsp granulated sugar
1 1/2 tsp ground cinnamon
Glaze
1/2 cup icing sugar
1 Tbsp 2% milk
Instructions:
Preheat the oven to 350F and line a 9” x 5” metal loaf pan with parchment paper.
Preparing the Apple Filling: To a medium bowl, add the diced apples, granulated sugar and cinnamon and mix until fully incorporated.
Making the Apple Fritter Bread: To a large mixing bowl, add the granulated and brown sugar, eggs, vanilla, milk and avocado oil. Whisk the mixture for 1 minute or until light and fluffy. Then, add the flour, baking powder, baking soda and nutmeg and whisk until fully incorporated.
Transfer 1/2 of the batter to the loaf pan, ensuring that it is evenly distributed. Then, sprinkle 1/2 of the apple filling over the top. Repeat the process with the remaining batter and apple filling.
Transfer the pan into the oven and bake for 1 hour and 5 minutes or until a toothpick inserted comes out clean.
Let the Apple Fritter bread cool in the loaf pan for 15 minutes. Then, remove it from the loaf pan and transfer it to a wire rack to finish cooling.
Creating the Glaze: To a small bowl, add the icing sugar and milk and whisk until fully incorporated.
The Finishing Touch: Using a spoon or a piping bag, drizzle the glaze over top. Cut the Apple Fritter bread into slices and serve and enjoy!
Notes:
Substituting the Oil: If you don’t have avocado oil on hand, you can simply substitute it with a neutral oil, such as sunflower or vegetable oil. Avoid oils with strong flavours as they will overpower or drown out the apple flavour in this dish.
You Are the Apple of My Eye: This recipe calls for Honeycrisp apples. But, if you don’t have any handy or simply can’t find them at your local grocer, then you can certainly substitute them with Granny Smith apples. Both varieties are great for baking and maintain their shape and texture when cooked.
Doneness Check: Rather than using a toothpick to check for doneness of your Apple Fritter Bread, you can also use a digital thermometer. Insert the thermometer into the thickest part of the bread and when the temperature registers 205F, you know your bread is fully cooked.
