Banana Bread Overnight Oats

Are you craving banana bread for breakfast or as a snack but don’t have the time to bake a loaf? Then, I’ve got a solution for you - Banana Bread Overnight Oats. These oats taste just like banana bread but in oatmeal form. They are topped with a chocolate shell, drizzle of peanut butter and sliced bananas. Who can resist!



This recipe comes together quickly (in just 10 minutes), and is made with simple ingredients, including oats, almond milk, banana, maple syrup and chocolate. Bonus points - it can be made in advance, making it the perfect grab-and-go breakfast or snack!

Ingredients:


Overnight Oats

  • 1/2 cup quick oats

  • 1/2 cup unsweetened almond milk (See Notes below)

  • 1/2 Tbsp peanut butter

  • 1/2 Tbsp maple syrup or honey

  • 1 banana, cut in half widthwise

  • Chocolate Shell and a drizzle of peanut butter, as garnish

Chocolate Shell

  • 3 Tbsp semi-sweet chocolate chips or squares

  • 1/4 tsp avocado or extra virgin olive oil


Instructions:

  1. Making the Overnight Oats: To a small bowl, add 1/2 of the banana and mash it with a whisk or a fork. Then, add the peanut butter and maple syrup and give it a good mix. Toss in the oats and pour in the almond milk and stir until fully incorporated.

  2. Transfer the overnight oats to a small bowl or a sealable storage container and refrigerate overnight to allow the mixture to thicken and the flavours to meld.

  3. Making the Chocolate Shell: Add the chocolate and oil to a microwave safe bowl and microwave for 1 minute or until the chocolate has fully melted. Give it a good stir.

  4. Remove the overnight oats from the refrigerator and pour the chocolate over top. Place the overnight oats back in the refrigerator for at least 8 minutes or until the chocolate has hardened.

  5. Cut the remaining portion of the banana into 1/4 inch slices and set aside. Then, garnish the overnight oats and chocolate shell with a drizzle of peanut butter and sliced banana. Serve and enjoy!



Notes:

  1. Milk Substitution: I have made this recipe using 2% milk and the results have been impeccable. But, you can go ahead and use whatever milk you have on hand or whatever your heart desires.

  2. Table for Two?: If you’re looking to make 2 portions of this simple and satisfying breakfast dish or snack, simply double the ingredients in this recipe. Store the overnight oats in a single container or divide the ingredients amongst 2 containers.

  3. Pressed for Time: Simply omit the chocolate shell and top the overnight oats with a drizzle of peanut butter and sliced banana. The overnight oats base recipe is tasty on its own!
