Everyone should have a banana bread recipe in their baking arsenal. Not only is banana bread delicious but it comes together quickly without any fuss. The bananas are the star of the show and my Banana Bread Au Chocolat recipe really lets them shine!
My Banana Bread is super tasty, tender, moist, hits the perfect sweetness note and is peppered with rich chocolate and a hint of warming spices to give it a little something-something. The secret here is using ripe bananas and plenty of them. Not only do they add a ton of moisture to this baked treat but they add big banana flavour relative to their not-so-ripe counterpart. A combination of brown and granulated sugar are used to achieve an optimal texture and flavour. All you chocolate lovers out there haven’t been forgotten! I’ve got you covered. Chocolates chips are thrown into the mix to create a rich, gooey and satisfying bite!
This quick bread comes together using just one bowl, a whisk and spoon and only requires 10 minutes of prep time. Oh, and the smell that it produces when baked is just divine. Ingredients:
1 3/4 cups ripe bananas, mashed (approx. 4 bananas)
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1/4 cup sour cream
1 1/2 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp kosher salt
Pinch of nutmeg
1/2 cup semi-sweet chocolate chips
An additional banana, cut in half lengthwise, as a topping
Instructions:
Preheat the oven to 350F and line a 9” x 5” loaf pan with parchment paper.
To a large mixing bowl, add the bananas and mash them with a whisk. Then, toss in the brown and granulated sugar, melted butter, eggs, sour cream and vanilla and whisk until fully incorporated. Add the flour, baking soda, cinnamon, salt and nutmeg and mix until just combined.
Fold in the chocolate chips and transfer the batter to the loaf pan. Top the banana bread with the sliced banana.
Bake for 1 hour and 20 minutes or until a toothpick inserted comes out clean. Remove the banana bread from the oven and let it cool in the pan for 15 minutes. Then, transfer the banana bread to a wire rack to fully cool. Serve and enjoy!
