All you need is a little Hocus Pocus and there you have it - a Bloodshot Cocktail. This adult-only, alcoholic Halloween concoction is made using tart pomegranate juice (which gives the drink its signature frighteningly red hue), the finest dark Rum, zesty lime juice and effervescent sparkling water. It’s light, refreshing and terrifyingly tasty!
My Bloodshot Cocktail wouldn’t be complete without a few bloodshot eyes. Bloodshot eyes, you say?! These creepy creations are made using 2 simple ingredients - lychees and blueberries. Not only do they taste delicious, but they are positively eye opening.

Ingredients:
2 ounces dark Rum
1 1/2 ounces pomegranate juice, chilled
1/2 ounce freshly squeezed lime juice
330 mL can sparkling water, chilled
1 can pitted lychees in syrup (See Notes below)
3 fresh blueberries
Instructions:
Forming the Lychee Eyes: Open the can of lychees and set 3 aside. Grab a blueberry and insert it into the pitted area of the lychee. Repeat the process for the remaining 2 Lychee Eyes.
Preparing the Bloodshot Cocktail: To a highball glass, add the dark Rum, pomegranate juice, lime juice and sparkling water and, using a cocktail stirrer, give it a good mix.
The Final Touches: Using a large spoon, lower 2 Lychee Eyes into the cocktail. Add the remaining Lychee Eye to a cocktail skewer and set it over the glass. Serve and enjoy! Cheers!
Notes:
Canned Lychees: If you can’t find canned lychees at your local grocer or specialty store, don’t fret! You can simply substitute them for fresh lychees. Simply peel and pit the fresh lychees and proceed with the instructions in the recipe above.
What Should I Do With the Remaining Canned Lychees?!: Canned lychees in syrup make for a delicious snack and can be enjoyed as is.
