Broccoli and Cheese Egg Casserole

Want a quiche without the stress of a crust? I present to you my Broccoli and Cheese Egg Casserole. This custardy baked egg dish is loaded with simple yet flavourful ingredients, including broccoli, scallions, prosciutto cotto and cheddar cheese. It comes together in just 10 minutes before you pop it into the oven. Just set it and forget it.

It makes for a satisfying breakfast or lunch and is perfect for any special occasion or the holidays. It's quite the crowd pleaser. Serve it on its own or accompanied by a soup or salad and you’ve got yourself an enjoyable and hearty meal.


Prep Time: 10 Minutes

Cook Time: 30 - 35 minutes

Total Time: 40 - 45 minutes

Serves: 8


Ingredients:

  • 8 large eggs

  • 1/4 cup sour cream

  • 1 tsp Dijon mustard

  • 1/2 tsp garlic powder

  • 1/2 tsp kosher salt

  • 1/4 tsp ground pepper

  • 1/8 tsp red pepper flakes, optional

  • 1 broccoli crown (approx. 3 1/2 cups) (See Notes below)

  • 5 scallions, thinly sliced

  • 1 cup (125g) sliced prosciutto cotto, cut into 1/2 inch squares (See Notes below)

  • 1/2 cup cheddar cheese, cut into 1/3 inch cubes

  • 1/2 Tbsp olive oil, for greasing the pan


Instructions:

  1. Preheat the oven to 350F and grease a 11” baking or pie dish with olive oil.

  2. To a large mixing bowl, add 8 eggs and whisk for 1 minute or until the eggs are light and fluffy. Then, add the sour cream, mustard, garlic powder, salt, pepper and red pepper flakes (optional) and whisk until fully blended. Set aside.

  3. Arrange the broccoli evenly over the base of the baking dish. Then, top it with the scallions, ham and cheese. Pour the egg mixture over top.

  4. Bake for 30 - 35 minutes or until knife inserted comes out clean. Serve and enjoy!



Notes:

  1. Preparing the Broccoli: Separate the broccoli into florets. Then, cut the large and medium florets into quarters and the smaller florets in half.

  2. Substituting the Protein: I created this recipe using prosciutto cotto, however, feel free to substitute the meat with a protein of your choice. Milder cold cuts, such as Black Forest ham, oven roasted turkey or chicken, Porchetta or Capicola, would complement the broccoli and flavour profile of this dish.
