Hut, Hut Hut! Get ready to take your game day or Super Bowl festivities to the next level with my homemade Buffalo Chicken wings! They’re crispy, tender, juicy, saucy, perfectly spiced and finger licking good! Oh, yeah! Be sure to make a double batch as these party snacks will disappear before you know it! I’d say that’s a touchdown! 


These Buffalo Chicken Wings are baked and not fried! But, don’t you worry, they're as crispy as ever thanks to my secret ingredient - cornstarch! The wings are coated in a cornstarch and dry rub mixture and are popped into the oven until perfectly cooked. Now, comes the fun part! The wings are tossed in a spicy and buttery buffalo sauce before they are transferred to a platter, waiting to be devoured!

Ingredients: 


Chicken Wings

  • 2.4 lbs (1.1kg) chicken wings (See Notes below)

  • 2 Tbsp avocado oil

  • 2 Tbsp cornstarch

  • 1 tsp garlic powder

  • 1/2 tsp kosher salt

  • 1/2 tsp onion powder

  • 1/2 tsp sweet paprika

  • 1/4 tsp freshly ground pepper

  • 1 green onion, thinly sliced, as garnish


Buffalo Wing Sauce

  • 1/3 cup hot sauce, such as Frank’s Red Hot 

  • 1 1/2 Tbsp unsalted butter

  • 1 Tbsp maple syrup

  • 1/2 tsp garlic powder

  • 1/4 tsp kosher salt


Instructions: 

  1. Preheat the oven to 425F and line a 11” x 13” rimmed baking sheet with parchment paper. Drizzle avocado oil over top, ensuring that it is evenly distributed.

  2. Preparing the Chicken Wings: Remove the chicken wings from the refrigerator and let them come to room temperature for approximately 20 minutes.

  3. Creating the Dry Rub: To a small bowl, add the cornstarch, garlic powder, salt, onion powder, paprika and freshly ground pepper and whisk until combined. 

  4. Pat the chicken wings dry with a paper towel and toss them into a large bowl. Sprinkle the dry rub over top and give the chicken wings a good toss until they are well coated in seasoning.

  5. Cooking the Chicken Wings: In a single layer, transfer the chicken wings to the baking sheet. Bake for 35 - 40 minutes or until the chicken is cooked through, flipping the chicken wings over halfway through the cooking time. 

  6. Making the Buffalo Wing Sauce: While the chicken wings are cooking, to a small saucepan set over medium heat, add the butter, hot sauce, maple syrup, garlic powder and salt and whisk until fully incorporated. Cook for 2 minutes.  

  7. The Finishing Touch: Remove the wings from the oven and transfer them into a large mixing bowl. Drizzle Buffalo Wing sauce over top and give them a toss, ensuring that the wings are well coated.

  8. Transfer the wings to a serving platter and garnish with sliced green onions. Serve and enjoy!


Notes:

  1. Cooking Times Will Vary: Chicken wings come in all shapes and sizes and will need to be cooked accordingly. Smaller wings will cook in 35 minutes while larger may take 40 minutes. The best way to check for overall doneness is to use a meat thermometer. For fully cooked wings, you are looking for a temperature of at least 165F (74C) but the sweet spot is a temperature of 175F (79C). At this temperature, the connective tissues break down, creating juicier and more tender wings!
