Caprese Grilled Cheese Sandwich

Grilled cheese sandwiches come in all shapes and sizes but this isn’t your typical grilled cheese. It’s jam-packed with big and bold flavours and is good to the very last bite! Creamy Mozzarella, fresh tomatoes and vibrant basil pesto are sandwiched between 2 slices of buttered bread. The sandwich is pan fried until the golden-brown and delicious. You know your grilled cheese is done when the cheese has melted and begins to ooze! 


My Caprese Grilled Cheese Sandwich is so good that you’ll be making it on repeat! Enjoy it for brunch, lunch, dinner or as a snack. This sandwich couldn’t be easier to make, comes together in 10 minutes and requires a handful of simple and everyday ingredients. So, let me show you how it’s done. Serves: 1


Ingredients:

  • 2 slices rye bread (See Notes below)

  • 1 Tbsp salted butter, softened

  • 1 Mozzarella ball

  • 1 medium vine tomato

  • 1 Tbsp store-bought or homemade basil pesto

  • 1/2 Tbsp extra virgin olive oil


Instructions:

  1. Grab two slices of rye bread and spread 1/2 Tbsp of salted butter onto each half.

  2. Using a sharp knife, cut your mozzarella ball into 8 slices, with each slice measuring an 1/8 of an inch in width. 

  3. Then, slice a medium vine tomato into 3 slices, with each slice measuring a 1/4 of an inch in width.

  4. Take one slice of bread and place it on a cutting board or plate, butter side down. Spread basil pesto evenly over top. Top it with 4 slices of mozzarella, followed by 3 slices of tomato and the remaining 4 slices of mozzarella. 

  5. Top the sandwich with the second piece of bread, butter side up, and set aside.

  6. To a medium skillet, set over medium-low heat, add the olive oil. Once hot, transfer the sandwich to the skillet and cook for 3 minutes or until golden-brown. Then, carefully flip and cook the sandwich for an additional 3 minutes or until the cheese has melted.

  7. Transfer the grilled cheese sandwich to a plate and serve and enjoy!

Notes:

  1. So Many Slices of Bread to Choose From: I love using rye bread in this recipe given its hearty consistency, texture and size. But, if you don’t have rye bread on hand, you can simply substitute it with sourdough or brioche. Either option works beautifully in this recipe!
