It’s everything you love about a Caprese Salad but in skewer form. Not only are these appetizers picture-perfect but they couldn’t be easier to make.
My Caprese Skewer recipe features vibrant tomatoes, soft Bocconcini cheese and fragrant basil. That’s it! It doesn’t get much easier than that! The skewers are arranged overtop rich olive oil and topped with a generous drizzle of bold, sweet and sticky Balsamic glaze. All the ingredients combine to create a fresh, creamy, aromatic, sweet, savoury and satisfying bite!

Serves: 4 - 8
Ingredients:
120g mini Bocconcini (16 mini bocconcini or mozzarella balls)
125g cherry tomatoes (16 cherry tomatoes)
16 fresh basil leaves
1 1/2 Tbsp extra virgin olive oil (See Notes below)
1/4 tsp kosher salt
Freshly ground pepper, to taste
A generous drizzle of Balsamic glaze, to taste
Instructions:
Set aside 8 cocktail skewers, measuring 4.3 inches or 11cm in length.
To each skewer, add a cherry tomato, followed by a basil leaf (folded in half), bocconcini, another cherry tomato, basil leaf (folded in half) and bocconcini.
Grab a large plate or serving platter and drizzle olive oil over top. Season with salt and pepper.
Arrange the Caprese Skewers in a single layer over the seasoned oil. Drizzle with a good dose of Balsamic glaze and serve and enjoy!
Notes:
Flavoured Olive Oils: Olive oils come in a variety of flavours. My recipe calls for extra virgin olive oil but if you want to change things up, then simply substitute the extra virgin olive oil in this recipe on a 1:1 basis with flavoured olive oil. I love using Terra Elyssa’s Basil Extra Virgin Olive Oil in this recipe as it amps up the basil flavour and adds incremental vibrancy and freshness to this dish. Lemon, garlic or chilli-infused extra virgin olive oils also perfectly compliment the ingredients in this dish.
