My homemade Chicken Salad Sandwich starts with a generous helping of chicken, sweet grapes, crisp celery, fragrant onion and a creamy and bright herb mayonnaise. The beyond delicious chicken salad is sandwiched between a toasted everything bagel and some fresh lettuce. All the ingredients combine to create one of the most craveable and satisfying bites!

Serves: 4 - 6
Ingredients:
3 cups (380g) cooked Cajun chicken breasts (approx. 2 large chicken breasts), cut into 1/2 inch cubes (See Notes below)
1 cup thinly sliced celery (approx. 2 celery stalks)
1 cup red grapes, halved
1/2 cup finely chopped red onion (approx. 1/2 medium red onion)
1/4 cup mayonnaise
1/4 cup full-fat sour cream (See Notes below)
2 Tbsp finely chopped flat leaf parsley
1 Tbsp whole grain mustard
1/2 Tbsp freshly squeezed lemon juice
1 tsp Dijon mustard
1/4 tsp kosher salt
Freshly ground pepper, to taste
4 - 6 bagels (See Notes below)
3 large romaine leaves, halved
Instructions:
To a large mixing bowl, add the mayonnaise, sour cream, parsley, whole grain and Dijon mustard, lemon juice, salt and pepper and whisk until combined.
Toss in the chicken, celery, grapes and red onion and mix until fully incorporated.
Cut a bagel in half, widthwise, and toast it to your desired doneness.
Lay a piece of lettuce over the bottom bagel slice. Top it with 2 - 3 scoops of chicken salad and cover with the top bagel slice. Serve and enjoy!
Notes:
Chicken Breasts: I love using Cajun Chicken in this recipe. The chicken breasts are coated in an aromatic Cajun spice blend and baked to perfection - leaving you with the most flavourful, juicy and tender chicken breasts. If Cajun Chicken isn’t your thing, simply substitute it with lightly seasoned, fried, poached or grilled chicken breasts. For a quick and easy option, substitute the baked chicken breasts with an equal measure of cubbed or shredded rotisserie chicken.
More Protein, Please!: If you want to amp up the protein content of this sandwich, simply replace the sour cream in this recipe on a 1:1 basis with Greek yoghurt.
Choosing Your Bread: I love using bagels in this recipe. Not only are they delicious but they are incredibly hearty, robust and sturdy and are capable of keeping all that tasty chicken salad in place! If you don’t have bagels handy, you can simply substitute them with a bread of your choice. Rye, whole wheat, brioche, multi-grain or gluten free are all wonderful options for this recipe. For best results, toast softer breads, such as brioche, as toasting the bread slices will give your sandwich a sturdier base.
