Ingredients:
Chickpea Salad
2 cans (15 oz) chickpeas or garbanzo beans, drained and rinsed
1 medium red onion, finely chopped
1 red pepper, finely chopped
1 yellow pepper, finely chopped
3 celery stalks, cut in half lengthwise and thinly sliced
1/3 cup parsley, finely chopped
Lemon Thyme Dressing
1/2 cup olive oil
3 Tbsp lemon juice (approx. 1 lemon)
2 Tbsp white wine vinegar
1 Tbsp fresh thyme leaves, finely chopped
1 clove of garlic, minced
1/2 Tbsp Dijon mustard
1/2 tsp coarse salt
1/4 tsp ground pepper
Instructions:
To a large mixing or salad bowl, add the olive oil, lemon juice, vinegar, thyme, garlic, mustard, salt and pepper and whisk until fully incorporated.
Toss in the chickpeas, onion, red and yellow pepper, celery and parsley. Using a large spoon or spatula, mix until all the ingredients are well coated in the Lemon Thyme dressing. Serve and enjoy!
