My Chocolate Blueberry Yoghurt Bites start with fresh and flavourful blueberries, fragrant vanilla, sweet honey and tangy Greek yoghurt. That’s it! Just mix, scoop and freeze. It’s really that simple. Now, here’s where the magic happens. Remove the yoghurt bites from the freezer, melt some chocolate and get dipping! Pop the Chocolate Blueberry Yoghurt Bites into the freezer to set and before you know it, you’ve got yourself one of the most satisfying bites! 


This treat couldn’t be easier to make, uses 6 simple ingredients and requires just 10 minutes of prep! Doesn’t that sound great?! Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 1 hour and 55 minutes (includes 1 hour and 45 minutes of inactive time)

Makes: 8 Yoghurt Bites


Ingredients:

  • 1 1/4 cups unsweetened and plain Greek yoghurt (See Notes below)

  • 1 Tbsp honey 

  • 1 tsp vanilla extract

  • 2 cups fresh blueberries (approx. 1 pint)

  • 1 1/4 cups semi-sweet chocolate chips

  • 3 tsp avocado oil


Instructions:

  1. Grab a 11” x 17” rimmed baking sheet and line it with parchment paper. Set aside. 

  2. Rinse the blueberries, pat them dry and set aside.

  3. To a medium bowl, add the Greek yoghurt, honey and vanilla and mix until fully incorporated. 

  4. Toss in the blueberries and, using a large spoon or spatula, carefully fold them into the yoghurt mixture until combined. 

  5. Spoon equal portions of the blueberry yoghurt mixture onto the parchment lined baking sheet and transfer them to the freezer. Freeze for 1 1/2 hours or until firm to the touch.

  6. To a microwave safe bowl, add the chocolate chips and avocado oil and microwave for 1 minute or until melted, stirring the chocolate every 30 seconds.

  7. Remove the frozen blueberry yoghurt bites from the freezer and, using a fork, dip each into the melted chocolate, ensuring that they are fully coated.

  8. Transfer the chocolate covered blueberry yoghurt bites back onto the parchment lined baking sheet and freeze for at least 15 minutes or until set.

  9. When you are ready to indulge, remove the Chocolate Blueberry Yoghurt Bites from the freezer and let them stand at room temperature for 5 minutes. This will cause the frozen yoghurt to slightly soften. Serve and enjoy!


Chocolate Blueberry Yoghurt Bites

Notes:

  1. Flavoured Yoghurt: If you don’t have any unsweetened and plain Greek yoghurt on hand, then you can simply substitute it with a flavoured Greek yoghurt, such as vanilla. When using flavoured yoghurt, keep in mind that it’s typically sweetened. So depending on your desired level of sweetness, you may need to omit or reduce the amount of honey and vanilla used in the recipe.
