Prep Time: 6 minutes
Cook Time: 14 minutes
Total Time: 20 minutes
Serves: 8 - 12
Ingredients:
1 can (226g) crescent dough
1/2 cup homemade or store-bought cranberry sauce
7 oz Brie cheese
1-2 sprigs fresh rosemary (optional), as garnish
Non-stick cooking spray or olive oil, for greasing the muffin tray
Instructions:
Preheat the oven to 375F and grease a 24-capacity mini muffin tray with non-stick cooking spray or olive oil.
Remove the crescent dough from the can and unroll it on top of a cutting board or counter. Using your fingers, press down on the perforated lines to seal the dough.
Using a pizza cutter or sharp knife, cut the dough into 24 squares. Add the dough to each of the muffin cups, pressing it in ever so slightly.
Cut the Brie cheese into 24 equal pieces. Top the dough with a piece of Brie cheese and a teaspoon of cranberry sauce.
Transfer the muffin tray into the oven and bake for 14 minutes or until the pastry has puffed up and is golden brown in colour.
Remove from the oven and set aside to rest for 5 minutes. Carefully run a spatula or the handle of a spoon around each of the muffin cups to loosen the pastry from the muffin tray.
Transfer the Cranberry Brie Bites to a serving platter or plate and garnish each with some rosemary. Serve and enjoy!
Notes:
Nothing a Spoon or Spatula Can’t Fix: Some of the brie may bubble over as it bakes. Don’t fret! Once the Cranberry Brie Bites have cooked through, simply use a spoon or spatula to scrape any melted Brie back into Cranberry Brie Bites. Voila - they’re picture perfect and ready to go!
