Creamy Parsnip Purée

Move over mashed potatoes, there’s a new ultra creamy side dish in town! My Creamy Parsnip Purée recipe is the ultimate accompaniment to any meal! It’s buttery, creamy, light, savoury, slightly sweet, rich and velvety. This swoon-worthy dish is so delicious that you’ll find yourself going in for spoonful after spoonful! Comfort food is taken to new and elevated heights with this root vegetable purée! 


My Creamy Parsnip Purée recipe starts off with parsnips and lots of them! Two pounds to be exact! The parsnips are peeled, cut into slices and tossed into a pot with whole milk, butter, garlic, a bay leaf and salt. The parsnips are cooked until fork tender and are transferred to a blender alongside the fragrant cooking liquid. With a flick of the switch, the blender transforms these parsnips into the most creamy, flavourful, luxurious, silky and smooth purée! 


Side dishes don’t get much better than my Creamy Parsnip Purée. This dish couldn’t be easier to make, comes together in just over 30 minutes and uses a handful of simple and everyday ingredients. So, let me show you how it’s done. Grab a spoon and come and cook with me!

Prep Time: 5 minutes

Cook Time: 15 - 20 minutes

Total Time: 35 - 40 minutes (includes 15 minutes for cooling)

Serves: 4 - 6


Ingredients:

  • 2 lbs parsnips, peeled and cut into 1/2 inch slices

  • 1 2/3 cup whole milk 

  • 1 cup cold water

  • 2 Tbsp unsalted butter

  • 1 garlic clove, peeled

  • 1 bay leaf

  • 1/2 tsp kosher salt

  • 1/2 Tbsp fresh chives, finely chopped, as garnish 


Instructions:

  1. To a large pot, add the parsnips, milk, water, butter, garlic, bay leaf and salt.

  2. Bring the ingredients to a simmer over medium heat and cook for 10 - 15 minutes or until the parsnips are fork tender. Turn off the heat and let the ingredients cool for at least 15 minutes. Remove the bay leaf and discard.

  3. Using a slotted spoon, transfer the parsnips into a blender and carefully pour in the cooking liquid. Blend on high speed for 1 minute or until silky and smooth.

  4. Transfer the Parsnip Purée into a medium bowl and garnish it with fresh chives. Serve and enjoy!

Notes:

  1. Take a Little Time to Chill: Adding hot contents to a blender will cause steam and pressure to build, which can be dangerous and lead to a mess. Therefore, it’s imperative to allow the parsnips and cooking liquid to sufficiently cool before blending. Once cool, the parsnips and cooking liquid will blend up perfectly. If you are in a rush and are looking for a time-saving shortcut, simply grab an immersion blender. This handheld blender allows you to purée hot contents in the pot without the wait time.
