My Crispy Chicken Sandwich recipe starts with lean ground chicken. The ground chicken is seasoned with authority, using an aromatic and flavourful spice blend and Dijon mustard. Not only does the mustard add a ton of flavour but it keeps the chicken patties extra juicy. The chicken mixture is divided and formed into 6 large and thick patties. The patties are then coated in a seasoned breadcrumb mixture (gluten-free or regular- either will do!) before being placed onto a greased baking sheet. They are lightly sprayed with some cooking oil and are popped into the oven for just 20 minutes. The crispy patties are sandwiched between lightly toasted, buttered buns alongside some lettuce and a good dose of mayonnaise. All the ingredients combine to create one of the most craveable, mouthwatering and satisfying bites!

Ingredients:


Chicken Patties

  • 2 lbs lean ground chicken

  • 1 Tbsp Dijon mustard

  • 1 tsp garlic powder

  • 3/4 tsp kosher salt

  • 1/2 tsp onion powder

  • Avocado oil cooking spray


Breading

  • 1 cup coarse breadcrumbs (gluten-free or regular)

  • 1/2 tsp kosher salt

  • 1/2 tsp freshly ground pepper

  • 1/2 tsp garlic powder

  • 1/4 tsp chili powder

  • 1/4 tsp paprika


Chicken Sandwich

  • 6 hamburger buns (gluten-free or regular)

  • 6 Tbsp salted butter

  • 1 small head romaine lettuce, thinly sliced

  • 1/3 cup mayonnaise


Instructions:

  1. Preheat the oven to 400F and line a 11” x 17” rimmed baking sheet with parchment paper. Give the parchment paper a light coating of avocado oil cooking spray and set aside. 

  2. Preparing the Breading: To a medium bowl, add the breadcrumbs, salt, ground pepper, garlic powder, chili powder and paprika and whisk until combined. Set aside.

  3. Making the Chicken Patties: To a large mixing bowl, add the ground chicken, mustard, garlic powder, salt and onion powder and, using your hands, mix until fully incorporated. 

  4. Divide the mixture into 6 equal portions. Then, shape each into a disc, measuring approximately 3/4 inch in thickness. 

  5. Coating the Chicken Patties: Dip each of the chicken patties into the breading, ensuring that they are well coated.

  6. Transfer the chicken patties onto the parchment lined baking sheet, leaving 2 inches between each patty. Spray the patties with a light coating of cooking oil.

  7. Bake for 20 minutes or until cooked through. You know your patties are fully cooked when, using a digital thermometer, the internal temperature reaches at least 165F (74C).

  8. Toasting the Buns: To a large non-stick or cast iron skillet, set over medium-high heat, add 2 Tbsp butter. Once melted, lay 2 hamburger buns onto the skillet, cut-side down, and cook for 1 1/2 - 2 minutes or until golden. Repeat the process with the remaining butter and hamburger buns.

  9. Assembling the Crispy Chicken Sandwich: Place the crispy chicken patty onto a toasted bun and top it with a handful of romaine lettuce and a spoonful of mayonnaise. Cover with the top bun and serve and enjoy!
