Weeknights are made easier with my Crispy Roasted Chicken Thighs. My recipe produces the juiciest and most flavourful chicken thighs with some of the crispiest skin in town. This one-pan dish couldn’t be simpler to make, uses a mere 7 ingredients that you already have on hand and comes together in just 55 minutes. Serve it alongside my Perfectly Roasted Potatoes with Garlic and Parmesan and a salad and you’ve got yourself a satisfying meal. Grab a spoon and come and cook with me!

Ingredients:
3 lbs chicken thighs, bone-in and skin-on
1 1/2 tbsp olive oil
1 1/4 tsp kosher salt
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/4 tsp ground pepper
Instructions:
Preheat the oven to 425F and line a 11” x 17” rimmed baking sheet with parchment paper. While the oven is preheating, remove the chicken thighs from the refrigerator and let them come to room temperature for 30 minutes. Pat the chicken thighs dry with a paper towel and set aside.
Place the chicken thighs onto the baking sheet and, using a pastry brush or your hands, brush or rub the olive oil over each of the thighs. Evenly season with salt, garlic and onion powder, paprika and pepper.
Transfer the chicken thighs to the oven and cook uncovered for 50 minutes or until the chicken is cooked through and the juices run clear. Serve and enjoy!
