Mortadella Sandwich

This isn’t your typical lunchbox sandwich! My Deli-Style Mortadella Sandwich recipe is oh so flavourful, hearty and downright delicious! This homemade sandwich starts with a generous dose of Mortadella, an Italian cold cut made with pork and a variety of seasonings. It’s soft, smooth and silky in texture and luxurious and rich in flavour. This glorious cold cut is sandwiched between a rustic and crusty Ciabatta bun, soft and creamy Buffalo Mozzarella, fresh and fragrant arugula, flavourful basil pesto and spicy mayo! All the ingredients combine beautifully to create one of the most craveable and satisfying bites! It’s a rockstar of a sandwich and is so good that you’ll be making it on repeat!

Ingredients:

  • 1 Ciabatta bun

  • 2 Tbsp mayonnaise

  • 1/2 tsp Calabrian chili paste

  • 2 Tbsp jarred or homemade basil pesto

  • 4 slices Buffalo Mozzarella, cut into 1/4 inch slices

  • 4 slices Mortadella

  • A handful of fresh arugula

  • 1/2 tsp lemon juice

  • Kosher salt and freshly ground pepper, to taste

  • 2 basil leaves and 2 pitted green olives, as garnish


Instructions:

  1. Using a sharp knife, cut the Ciabatta bun in half horizontally.

  2. Creating the Spicy Mayo: To a small bowl, add the mayonnaise and Calabrian chili paste and mix until combined.

  3. Sandwich Assembly: Spread the spicy mayo over the top half of the Ciabatta bun and set aside. 

  4. Spoon and spread the pesto over the base of the bottom half of the Ciabatta bun.

  5. Top it with 4 slices of Buffalo Mozzarella, followed by 4 slices of Mortadella and a handful of arugula.

  6. Squeeze lemon juice over the greens and season with salt and pepper.

  7. Top the sandwich with the remaining half of the Ciabatta bun.

  8. The Finishing Touch: To a cocktail skewer, add 2 basil leaves and 2 pitted green olives. Pierce the sandwich with the skewer and serve and enjoy!
