As the name suggests, this satisfying dip is comprised of 7 layers, including - refried beans, guacamole, sour cream, salsa, cheddar cheese, green onions and Pico de Gallo. All the ingredients combine to create a fresh, cheesy, oniony, creamy, sweet, zesty, spicy, savoury and crave-worthy spoonful! Isn’t that a mouthful - both figuratively and literally!
This dip comes together in under 10 minutes, uses 8 simple ingredients and couldn’t be easier to make. Using store-bought guacamole, salsa and Pico de Gallo cuts down on overall prep time but you can certainly opt to make your own at home! Check out my Homemade Guacamole and Pico de Gallo recipes! Ingredients:
1 398mL (14 fl oz) can refried beans (See Notes below)
1 cup plus 1 1/2 Tbsp sour cream, divided
1/2 - 1 tsp hot sauce (See Notes below)
1 1/2 cups store-bought or homemade guacamole
1 1/4 cups jarred tomato salsa plus 1 Tbsp, divided (See Notes below)
1 1/2 cups sharp cheddar cheese, grated
3 green onions, thinly sliced
1/2 cup store-bought or homemade Pico de Gallo
Instructions:
To a medium bowl, add the refried beans, 1 1/2 Tbsp sour cream, 1 Tbsp salsa and hot sauce and mix until fully incorporated.
To a glass bowl (7 cup capacity), add the refried bean mixture, ensuring it is evenly distributed.
Top the beans with a layer of guacamole, followed by a layer of sour cream and the remaining 1 1/4 cups of salsa, ensuring that each layer is evenly distributed.
Sprinkle cheddar cheese over top, followed by the green onions. Garnish the dip with Pico de Gallo and serve and enjoy!
Notes:
There’s no Beans About it: Adding a touch of sour cream to the refried beans loosens and softens the mixture and makes it creamier and smoother! This combination makes your dip more dip-able or scoop-able and keeps your tortilla chips intact.
I’m Feeling Hot, Hot, Hot!: I love adding a teaspoon of hot sauce to the refried bean mixture. Not only does it liven up the beans but it also provides a subtle kick. If you love spicy food, feel free to take things up a notch and add a little more hot sauce (to taste) or use a jarred tomato salsa that really brings the heat.
