Easy Cucumber Salmon Bites

Let’s get the party started! Cucumber Salmon Bites are about to become your quick and easy, go-to party snack or appetizer! These one bite wonders are so delicious that you would be hard pressed to have just one! It’s the appetizer recipe that you’ll be making on repeat! 


Cucumbers are all the rage these days and for good reason! They are crispy, crunchy, fresh and couldn’t be more hydrating! My Cucumber Salmon Bite recipe starts off with a large English cucumber. The cucumber is cut into thick slices and is topped with smoked salmon. Lemon, dill and shallot cream cheese is pipped over top and garnished with capers and more dill. The result - the perfect and most satisfying bite!

Serves: 8 - 10 (Makes 34 pieces)


Ingredients:

  • 1 large English cucumber

  • 6 oz. cream cheese, softened (approx. 3/4 cup) (See Notes below)

  • 3 Tbsp sour cream

  • 1 Tbsp finely diced shallot (approx. 1 small shallot) 

  • 1 Tbsp fresh dill fronds, finely chopped

  • Juice of 1/2 lemon (approx. 1 1/2 Tbsp)

  • 1/2 tsp lemon zest (approx. 1 lemon)

  • Freshly ground pepper, to taste

  • 170g sliced smoked salmon, torn into bite sized pieces

  • 2 Tbsp capers, drained

  • Additional dill fronds, as garnish


Instructions:

  1. Rinse and pat dry a large cucumber. Using a sharp knife, cut the cucumber into 1/4 inch slices, on the diagonal. 

  2. To a small bowl, add the cream cheese, sour cream, shallot, dill fronds, lemon juice, lemon zest and pepper and mix until fully incorporated. Transfer the lemon and dill cream cheese into a piping bag and set aside.

  3. Place the cucumber slices onto a serving platter or large plate and top each with smoked salmon pieces. Squeeze a dollop of cream cheese over top. 

  4. Garnish with capers and dill fronds and serve and enjoy!

Notes:

  1. Piping Bag: If you don’t have a pastry or piping bag handy, have no fear! You can get the job done equally well with a simple yet large zipper freezer bag. Spoon the cream cheese filling into the freezer bag, cut off the tip with your trusty scissors and pipe away!

  2. Leftover Cream Cheese?!: Depending on how shy or generous you are with your piping, you may have some leftover cream cheese filling. If so, repurpose it for breakfast or lunch via a bagel with the cream cheese filling, smoked salmon, thinly sliced red onion, capers and dill. Serve and enjoy!
