This French carrot salad has a certain je ne sais quoi! Parsley and chives, quintessential French herbs, are combined with grated carrots and lemon Dijon salad dressing to create a satisfying bite that is just magnifique!
My French Carrot Salad is incredibly easy to make, requires a handful (or two) of ingredients and comes together in just 15 minutes. You can enjoy this salad just after it’s made but I highly recommend letting the flavours meld overnight. Like a fine French wine, this salad gets better with age! So, let me show you how it’s done! Ingredients:
7 1/2 cups carrots, grated (approx. 6 large carrots or 1.5 lbs) (See Notes below)
1/2 cup parsley leaves, finely chopped
2 Tbsp chives, finely chopped
1/4 cup olive oil
1/4 cup fresh lemon juice (approx. 1 large lemon)
1 1/2 tsp Dijon mustard
1 tsp honey
1/2 tsp coarse salt
1/4 tsp cumin
Freshly ground pepper
Instructions:
Using the large holes on a box grater, grate the carrots. Set aside.
To a large mixing or salad bowl, add the olive oil, lemon juice, mustard, honey, salt, cumin and ground pepper and whisk until fully incorporated.
Toss in the carrots, parsley and chives and give it a good mix until all the ingredients are well-combined.
Transfer the carrot salad to the refrigerator for at least 1 hour or preferably overnight to allow the flavours to meld. Give it a final mix prior to serving and enjoy!
Notes:
Speeding Up the Grating Process: If you don’t have a box grater or simply want to reduce the overall prep time, you can use the grating attachment on your trusty food processor to grate the carrots.
