Dill Pickle Coleslaw

My homemade coleslaw recipe is an ode to dill pickles! It’s full of dill pickle flavour - from the pickles, to the dill, to the brine and the celery seed. As my grandmother would always say: the gangs all here! The dressing is really where it’s at and brings the flavour to this coleslaw party!


Using packaged pre-shredded coleslaw is really a timesaver and game changer! This recipe couldn’t be easier and comes together in just 5 minutes. Serve it on its own or use it as topping for a sandwich, burger or my Mouthwatering Pulled Pork Sandwich.

Ingredients:


Coleslaw

  • 500g package of pre-shredded coleslaw

  • 3 scallions, finely sliced

  • 2 Tbsp pickles, finely chopped (optional)

Dill Pickle Dressing

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1 1/2 Tbsp white wine vinegar

  • 1 Tbsp pickle juice

  • 1 Tbsp sugar

  • 1/2 Tbsp dried dill weed

  • 1/2 tsp celery seed

  • 1/4 tsp ground pepper

Instructions:

  1. To a large bowl, add the mayonnaise, sour cream, vinegar, pickle juice, sugar, dill weed, celery seed and pepper and whisk it until just combined.

  2. To the same bowl, drop in the scallions, coleslaw and chopped pickles (optional but adds extra pickle flavour) and give it a final mix.

  3. Transfer the bowl to the refrigerator for 30 minutes to let the flavours meld. Serve and enjoy!



Notes:

  1. The Coleslaw Mix is Interchangeable: In this recipe, I like using a coleslaw mix that is comprised of green cabbage, broccoli stems, Brussel sprouts and radicchio. But, you can certainly go the traditional route, with a “standard” coleslaw mix - including green and purple cabbage and carrots.
