You’re in luck - A special delivery from the Sugar Plum Fairy and it's just in time for the weekend! It’s my Magical Plum Cake. This sweet treat couldn’t be more whimsical and delicious and is too fruity for words.
This vanilla-infused cake has a pound-like consistency and a beautiful texture and crumb. It’s adorned with handfuls of perfectly ripe and tart black plums, which only get softer and sweeter when baked. How divine!
You can enjoy this dessert as is, but, why not go the extra mile and give this cake a dusting of icing sugar, that it deserves. My Plum Cake is perfect for breakfast, brunch, dessert or as a snack. It would be a wonderful addition at your next dinner party, date night, or festive occasion!

Ingredients:
Plum Cake
3/4 cup granulated sugar
1/2 cup unsalted butter, at room temperature
2 large eggs, at room temperature
1 1/2 tsp vanilla extract
1/2 cup full fat sour cream
1 1/2 cups all-purpose flour or gluten-free flour (such as Cup4Cup's Multipurpose Gluten-Free Flour)
1 1/2 tsp baking powder
1/4 tsp kosher salt
9 black plums, halved and pitted
1/2 Tbsp unsalted butter, for greasing the pan
1 Tbsp icing sugar, as garnish
Sugar Coating
2 Tbsp granulated sugar
1 1/2 Tbsp unsalted butter, melted
Instructions:
Preheat the oven to 350F and line the base of a 9” springform pan with parchment paper. Grease the sides of the baking pan with 1/2 Tbsp butter.
Preparing the Plum Cake Batter: To a large mixing bowl, add the sugar and 1/2 cup butter. Using a handheld mixer, beat the sugar and butter on high speed for 2 minutes or until the mixture is pale in colour and light and fluffy. Then, add the eggs and vanilla and mix for an additional minute until combined.
Add the sour cream, flour, baking powder and salt and mix on low speed until all the ingredients are fully incorporated. Be careful not to over mix the batter.
Pour the cake batter into the springform pan, distributing it evenly throughout.
A Dusting of Sugar Coating: Pour the melted butter evenly over the cake batter and finish it off with a sprinkling of sugar.
The Finishing Touch: Arrange the halved plums over top, cut side up, and push them into the batter ever so slightly.
Transfer the springform pan into the oven and bake for 65 to 70 minutes or until a tooth pick inserted comes out clean.
Remove the cake from the oven and let it cool completely in the springform pan. To release the cake, simply run a knife or spatula around the inside of the pan.
Transfer the cake to a serving platter or plate. Enjoy as is or garnish it with a dusting of icing sugar. Serve and enjoy!
