Melon Salad with Bocconcini & Prosciutto

Melon Salad

I’m not ready to let go of summer just yet. So, let’s make the most of it with a fresh and summery salad! Melons are sweet, ripe and plentiful this time of year. And, when you find good melons, you know what to do! Buy them and make this salad. You’ll be happy that you did!


My Melon Salad recipe pairs fresh and sweet cantaloupe and honeydew melon with creamy and soft Bocconcini, salty and savoury Prosciutto and peppery arugula to create the perfect summer bite! Not only is this salad a stunner but it couldn’t be easier to make and comes together in just 15 minutes.

Ingredients:

  • 1/2 small cantaloupe (See Notes below)

  • 1/2 small honeydew melon (See Notes below)

  • 142g (5 oz) baby arugula

  • 2 1/2 Tbsp olive oil

  • 1 1/2 Tbsp white balsamic vinegar

  • 1/4 tsp coarse salt

  • 1/4 tsp freshly ground pepper

  • 200g mini Bocconcini cheese

  • 100g Prosciutto, thinly sliced (See Notes below)

  • 20 basil leaves


Instructions:

  1. Slice the cantaloupe and honeydew melons in half and, using a spoon, scoop out and remove the seeds. Then, cut into the fruit with a melon baller and with a simple twist of a wrist, scoop out the bite size pieces of melon. Transfer the melons to a medium bowl and set aside.

  2. To a large salad bowl, add the olive oil, white balsamic vinegar, salt and pepper and whisk until combined. Toss in the arugula and give it a good mix, ensuring that the greens are well coated in dressing.

  3. Top the salad with cantaloupe and honeydew melon, Bocconcini, Prosciutto and basil leaves. Give the salad a good mix before serving and enjoy!



Notes:

  1. What If I Don’t Have a Melon Baller At Home?: Don’t fret! You can simply cut the melon into 1/2 inch cubes. The cubes will add variety and additional dimension to the overall presentation of this dish!

  2. Prosciutto Presentation: You can simply tear the Prosciutto into bite size pieces or roll it up to create a flower shape, as illustrated above.
