The green beans are blanched and then sautéed alongside garlic and a scallion. They are then tossed in a sweet, silky and rich miso butter, that packs a powerful punch and is so full of umami flavour. White miso paste plays a staring role in this recipe. This fermented soybean and rice paste packs a whole lot of flavour and complexity in a single spoonful. It is sweet, salty and savoury and really takes these beans to new heights. Ingredients:
380g haricot verts or green beans, ends trimmed
1 Tbsp garlic, finely chopped (approx. 4 cloves)
1 scallion, thinly sliced
2 Tbsp unsalted butter, melted
1 Tbsp white miso paste
Instructions:
To a large skillet set over medium-high heat, add the beans and enough water to just cover the beans (approx. 3 cups but it will depend on the size of your skillet). Bring the water to a boil and cook the beans for 4 - 5 minutes or until they have slightly softened.
While the beans are cooking, to a small bowl, add the melted butter and miso paste and whisk until fully incorporated. Set aside.
Drain the beans and return them to the skillet. Add the garlic, scallion and miso butter and toss to combine. Reduce the heat to medium and cook for an additional 1 - 2 minutes or to your desired level of doneness. Transfer the beans to a serving platter or plate and serve and enjoy!
