My Oven Roasted Crispy Chickpea recipe transforms soft and chewy canned chickpeas into crispy, crunchy and flavourful bites! The canned chickpeas are tossed in avocado oil and are roasted in the oven until golden in colour and crispy. Once cooked, they are seasoned with an aromatic spice blend, comprised of garlic powder, salt and sumac, which give these little morsels a rich, salty, savoury and zesty flavour profile. These Oven Roasted Crispy Chickpeas are so delicious, you would be hard-pressed to stop at just a handful!

Serves: 4 - 6
Ingredients:
1 540mL (19 fl.oz) can of chickpeas (See Notes Below)
1 Tbsp plus 1 tsp avocado oil
1/2 tsp kosher salt
1/4 tsp sumac (See Notes Below)
1/8 tsp garlic powder (See Notes Below)
Instructions:
Preheat the oven to 400F and line a 11” x 17” rimmed baking sheet with parchment paper.
Using a colander, drain and rinse the canned chickpeas until the water runs clear.
Transfer the chickpeas to a dish towel. Gently rub them between the towel to loosen their skin. Discard the skin and pat the chickpeas dry.
Transfer the chickpeas onto the parchment lined baking sheet and drizzle avocado oil over top. Toss the chickpeas until they are fully coated in oil and season them with salt.
Bake the chickpeas for 25 - 30 minutes or until the chickpeas are golden-brown in colour and slightly crispy. To ensure maximum crispiness, give the baking sheet a little shake half way through the cook time.
Remove the chickpeas from the oven and season them with sumac and garlic powder. Let the chickpeas fully cool at room temperature. The chickpeas will continue to crispy up as they cool.
Enjoy them as a snack or use them as a topping for your favourite salad or vegetable or protein bowl.
Notes:
Adjusting the Baking Time: Baking times will vary depending on your oven and the crispiness level that you are looking to achieve. A bake time of 25 minutes will yield a crispy exterior yet buttery interior, while a longer bake time (or 30 minutes +) will yield an interior and exterior that is crispy in nature. It’s all a matter of preference. Check for crispiness and adjust the baking time as needed.
The Spice Blend: To avoid scorching or burning the spice blend during baking, sprinkle the garlic powder and sumac over top of the chickpeas once cooked.
