It’s time to get nostalgic! Peanut Butter Chocolate Bars were one of my late grandmother’s signature desserts. She was quite the baker - but, this recipe seemed to be her go-to and was definitely one of my favourites! She would often make them when she knew I was coming over for a visit. Let me tell you, these bars were incredibly delicious and so satisfying, which made it all the more difficult to stick to just one square! These days, anytime I want to feel close to her, I find myself making these craveable and simple sweet treats!

Prep Time: 2 minutes
Cook Time: 4 minutes
Total Time: 2 hours and 6 minutes (includes at least 2 hours of chilling time)
Serves: 12 (Makes 24 Squares)
Ingredients:
6 cups Rice Krispies cereal
2 Tbsp unsalted butter
2 cups semi-sweet chocolate chips
1 1/2 cups crunchy peanut butter (See Notes below)
1/4 cup honey
1 tsp vanilla extract
1/2 tsp kosher salt
Instructions:
Line a 8” x 10” baking pan with parchment paper and set aside.
To a large pot set over low heat, add the butter and cook for 30 seconds or until melted. Then, toss in the chocolate chips, peanut butter and honey, stir and cook for an additional 3 minutes or until the chocolate has melted.
Turn off the heat, add the vanilla and salt and give it a good mix. Toss in the Rice Krispies and, using a spatula, mix until all the ingredients are fully incorporated.
Pour the mixture into the baking pan, ensuring it is evenly distributed.
Transfer the baking pan to the refrigerator for approximately 2 - 4 hours or until the mixture is fully set.
Using the parchment paper, lift and transfer the Peanut Butter Chocolate Bar from the baking pan to a cutting board. Using a sharp knife, cut into squares.
Transfer the Peanut Butter Chocolate Bars to a serving platter or plate and serve and enjoy!
Notes:
Not All Peanut Butters are Alike: I love using crunchy peanut butter in this recipe as it gives these bars some added crispiness and crunch. But, if you don’t have any handy or simply can’t find it at your local grocer, you can substitute it with creamy or smooth peanut butter on a 1:1 basis. Although, natural peanut butters are tasty and perfect on toast with some jam, they are far too runny for this recipe and, if used, will impact the overall structure and texture of these bars.
