Perfectly Roasted Potatoes with Garlic and Parmesan

My Perfectly Roasted Potatoes with Garlic and Parmesan recipe comes together in just 40 minutes and couldn’t be simpler to make! Fingerling potatoes take centre stage in this recipe. These small yet lengthy potatoes are super tasty, quick and easy to prepare (as they don’t require peeling) and cook up in the oven in no time at all. They are tossed in olive oil, Parmesan cheese, garlic, thyme leaves, salt and pepper and are roasted to perfection, leaving you with melt-in-your-mouth potato morsels.

Serves: 6 - 8


Ingredients:

  • 2 1/2 lbs fingerling potatoes, cut in half lengthwise

  • 4 Tbsp olive oil

  • 1/2 cup parmesan cheese, grated

  • 3 cloves garlic, minced

  • 2 tsp fresh thyme leaves

  • 1/2 tsp kosher salt

  • 1/4 tsp ground pepper


Instructions:

  1. Preheat the oven to 425F and line a 11” x 13” rimmed baking sheet with parchment paper.

  2. To a large bowl, add the olive oil, parmesan, garlic, thyme, salt and pepper and mix until fully incorporated. Toss in the potatoes and mix until combined, ensuring that all the potatoes are well-coated in seasoning.

  3. Arrange the potatoes in a single layer on the baking sheet and transfer them to the oven to roast for 30 minutes or until fork tender. Serve and enjoy!


Notes:

  1. Making Clean Up a Breeze: If you are looking to limit the number of dishes and want to make clean up a breeze, simply skip the mixing bowl. Toss all the ingredients onto the baking sheet, give it a good mix, ensuring that the potatoes are well-coated. Then, transfer the baking sheet to the oven and allow it to work its magic!
