Roasted Broccolini with Olive Tapenade

Your order is up - Roasted Broccolini with Olive Tapenade. Say hello to broccoli’s taller and sweeter sibling - broccolini! This leafy green vegetable has a sweeter taste, longer stems and smaller florets relative to its counterpart. It’s a versatile veggie that holds up well to a variety of cooking methods - steaming, sautéing or roasting. Hands down, my favourite way of preparing broccolini has got to be roasting it at a high temperature for 17 minutes. This method gives the broccolini a slight char while maintaining some of its crispness and crunch.


The roasted broccolini is then topped with the crown jewel, my Olive Tapenade. It’s salty, briny, silky, herbaceous and garlicky and adds a certain je ne sais quoi to this dish. I couldn’t think of a more perfect bite! Enjoy it for brunch, lunch or dinner. Serve it alongside my Pan-Fried Trout, Citrus Roasted Salmon with Fennel, Cajun Chicken or Date Night Roasted Chicken and Potatoes and you’ve got yourself a winning meal!


Prep Time: 5 minutes

Cook Time: 17 minutes

Total Time: 22 minutes


Ingredients:

  • 1.5 lbs or 680g broccolini

  • 1 1/2 Tbsp olive oil

  • 1/4 tsp kosher salt

  • 1/4 tsp crushed red pepper flakes

  • 1/2 cup olive tapenade

  • Pitted green olives (halved), as garnish

Instructions:

  1. Preheat the oven to 450F. Lay the broccolini onto a 11” x 17” rimmed baking sheet and drizzle it with oil and season with salt and crushed red pepper flakes. Give it a good mix to ensure that the broccolini is well coated in oil and seasoning.

  2. Transfer the broccolini to the oven and bake for 17 minutes or until the florets are slightly charred.

  3. Remove the broccolini from the oven and transfer them to a plate or a serving platter. Lay the tapenade over top and garnish with pitted green olives. Serve and enjoy!



Notes:

  1. Not a Fan of Olives: Not to worry! The broccolini is fantastic on its own! However, given the lack of olives and the salinity that they bring to the table, simply adjust the level of seasoning by adding an extra 1/4 tsp of kosher salt to the base recipe, bringing you to 1/2 tsp of salt, in total. Serve and enjoy!
