Roasted Carrots with Herb Yoghurt Sauce

If you are looking for a flavourful and filling side dish, then you have to try my Roasted Carrots with Herb Yoghurt Sauce recipe. The carrots are roasted to perfection and are coated in a honey and harissa oil, which adds a touch of sweetness and warming heat to this dish.


But, wait, it gets better! The carrots are nestled in a simple and delicious Herb Yoghurt Sauce, which really elevates the dish! It’s made with simple and everyday ingredients, including Greek yoghurt, lemon juice, garlic, parsley, cilantro and mint. The combination of ingredients creates a sauce that is light, tangy, fresh and refreshing. This sauce is incredibly versatile and can be paired with other roasted vegetables, used as a spread in sandwiches or burgers or as a dip for chips or your vegetable or crudités platter.

Serves: 4 - 6


Ingredients:

Honey and Harissa Carrots

  • 2 lbs medium carrots (approx. 14 carrots) (See Notes below)

  • 2 Tbsp olive oil

  • 1 Tbsp honey

  • 1/2 tsp kosher salt

  • 1/4 tsp ground harissa spice (optional)

Herb Yoghurt Sauce

  • 1 1/2 cups Greek yoghurt

  • 2 Tbsp lemon juice

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1 clove of garlic, minced

  • 1/2 cup parsley, finely chopped

  • 1/2 cup cilantro, finely chopped (See Notes below)

  • 1/3 cup mint, finely chopped


Instructions:

  1. Preheat the oven to 400F and line a 11” x 17” rimmed baking sheet with parchment paper.

  2. In a small bowl, add the oil, honey, salt and harissa and mix until combined.

  3. In a single layer, scatter the carrots over the baking sheet and coat them with the honey and harissa oil.

  4. Transfer the baking sheet to the oven and bake for 35 - 40 minutes or until the carrots have softened and are slightly caramelized.

  5. While the carrots are roasting, combine the yoghurt, lemon juice, salt, pepper, garlic, parsley, cilantro and mint in a medium bowl. Using a spoon, mix until the ingredients are fully incorporated. Then, spoon and spread the mixture onto a plate or serving platter.

  6. Remove the carrots from the oven and carefully lay them on top of the herb yoghurt sauce. Serve and enjoy!



Notes:

  1. To Peel or Not to Peel, That is the Question: You can really go either way, without changing the flavour and texture of this dish.

  2. If You’re Not a Fan of Cilantro: If cilantro doesn’t jive with you, then have no fear! You can simply omit the cilantro in this recipe and replace it with more parsley. Basil would also be a lovely option and complement the ingredients in this recipe.

  3. Prefer a Smoother Sauce?: If you prefer a smoother consistency with respect to sauces, simply add the Herb Yoghurt Sauce ingredients to a food processor and puree it to your desired texture.
