Tomatoes, Mozzarella and Basil, oh my! I had my share of Caprese salads during my last trip to Italy and they did not disappoint! The tomatoes were so fresh, the mozzarella so luscious, the basil was so fragrant and the rich olive oil was simply the chef’s kiss. I couldn’t get enough! Trust me! So, I am bringing a little piece of Italy to your home with my Caprese Salad.
This salad is made with simple and satisfying ingredients and comes together in just 10 minutes. It’s the perfect side dish for your weeknight dinner, date night or when you’re entertaining family and friends. Not only is it delicious but it’s really a stunner and is sure to impress the crowd!

Serves: 4 - 6
Ingredients:
3 large vine ripened tomatoes, cut into 1/4 inch slices (See Notes below)
200g fresh large mozzarella or bocconcini cheese, sliced into 1/8 inch slices
A handful of fresh basil leaves
Salt and ground pepper, to taste
Drizzle of olive oil
Instructions:
To a medium serving plate or platter, arrange slices of tomato followed by the mozzarella or bocconcini in a circular pattern, garnishing with basil leaves throughout. Repeat this pattern until the plate is covered or you’ve run out of tomatoes and cheese.
Season with salt and pepper and drizzle with olive oil. Serve and enjoy!
Notes:
Looking for a Little Sweetness: If you are looking to satisfy your sweet tooth, you can always add a drizzle of balsamic vinegar or top the salad with balsamic glaze.
