Cobb Salad

Cobb Salad, anyone?! This is the salad of all salads! It’s the salad that eats like a meal! So, grab a fork and knife and a good appetite and dig right in!


My Simple Cobb Salad recipe features leafy romaine lettuce, flavourful Cajun chicken, perfectly cooked hard-boiled eggs, crispy bacon, creamy avocado, vibrant grape tomatoes and earthy Blue cheese. The salad is topped with a bright, fresh and tangy Chive Vinaigrette. Now, isn’t that the perfect combo! All the ingredients combine to create the most flavourful and satisfying spoonful!


We eat with our eyes first, so why not impress your guests with this delicious salad! For a colourful and playful presentation, simply arrange all the ingredients in rows over top of the lettuce. Voila - a creation almost too pretty to eat!

Ingredients:


Cobb Salad

  • 2 small heads romaine lettuce, washed and cut into 1/2 inch slices

  • 2 fully cooked Cajun chicken breasts, cut into 1/2 inch slices (approx. 14 oz) (See Notes below)

  • 3 hard-boiled eggs, peeled and halved (See Notes below)

  • 8 cooked bacon slices, cut into 1/2 inch pieces (See Notes below)

  • 1 avocado, pitted, peeled and thinly sliced

  • 1 3/4 cups grape tomatoes, halved (approx. 255g) (See Notes below)

  • 1/2 cup Blue cheese, crumbled (approx. 125g)


Chive Vinaigrette

  • 1/2 cup extra virgin olive oil

  • 3 Tbsp white wine vinegar

  • 2 Tbsp thinly sliced chives

  • 1 Tbsp Dijon mustard

  • 1/2 Tbsp honey

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly ground pepper


Instructions:

  1. To a small mason jar (with a lid) or measuring cup, add the olive oil, vinegar, chives, mustard, honey, salt and ground pepper. Shake or whisk until fully incorporated and set aside.

  2. To a large salad or mixing bowl, add the lettuce. Top it with Cajun chicken, hard-boiled eggs, bacon, avocado, grape tomatoes and Blue cheese.

  3. Drizzle the Chive Vinaigrette over top, toss and serve and enjoy!

Notes:

  1. Chicken Breasts: I love using Cajun Chicken in this recipe. The chicken breasts are coated in an aromatic Cajun spice blend and baked to perfection - leaving you with the most flavourful, juicy and tender chicken breasts. If Cajun Chicken isn’t your thing, simply substitute it with lightly seasoned, fried, poached or grilled chicken breasts. For a quick and easy option, substitute the baked chicken breasts with an equal measure of shredded rotisserie chicken.

  2. How to Hard-Boil Eggs: Once the water has come to a boil, set the timer to 8 minutes. This will yield perfectly cooked hard boiled eggs, with pale yellow yolks. Check out my Egg Sandwich recipe for step-by-step instructions on how to achieve perfectly hard-boiled eggs!

Follow my recipe, omitting the seasoning and hot honey, and you’ll have yourself perfectly cooked bacon in no time! Bacon slices come in all shapes and sizes - thinner slices require a shorter cook time while thicker cuts benefit from a little more heat. Be sure to keep an eye on the bacon during the last few minutes of cook time, as the colour changes quickly.

  4. So Many Tomatoes: This recipe calls for grape tomatoes. If you don’t have any handy or can’t find them at your local grocer, then simply substitute them with cherry tomatoes on a 1:1 basis. Either option works beautifully in this dish!
