Three Bean Salad

This triple threat Three Bean Salad will rival any bean salad you’ve made! It couldn’t be simpler to make - all you need is 3 cans of beans, some vegetables, cilantro and 10 minutes of your time! The Lime & Smokey Salad Dressing is flavoured with lime juice and zest, cumin and hot sauce - which give it a southwestern flair! All the ingredients combine to produce a satisfying and hearty spoonful!


My three bean salad is the perfect weeknight meal, picnic snack or side dish that you’ll want to serve or bring to your next social gathering or celebration. Grab a spoon and dig right in!

Ingredients:


Bean Salad

  • 1 can black beans (540mL or 19 fl.oz), drained and rinsed (See Notes below)

  • 1 can chickpeas (540mL or 19 fl.oz), drained and rinsed (See Notes below)

  • 1 can kidney beans (540mL or 19 fl.oz), drained and rinsed (See Notes below)

  • 3 celery stalks, cut in half lengthwise and thinly sliced

  • 1 red pepper, finely chopped

  • 1/2 medium red onion, finely chopped

  • 1/4 cup cilantro, finely chopped

  • 1 cup cooked corn (optional) (See Notes below)

  • Lime wedges and cilantro leaves, as garnish

Lime & Smokey Salad Dressing

  • 1/2 cup olive oil

  • 3 Tbsp lime juice (approx. 2 limes)

  • Zest of 2 limes

  • 1 clove of garlic, minced

  • 3/4 tsp cumin

  • 1/2 tsp kosher salt

  • 1/2 tsp ground pepper

  • 1/2 tsp hot sauce


Instructions:

  1. To a large bowl, add the black beans, chickpeas, kidney beans, celery, red pepper, onion and cilantro and give it a good mix.

  2. To a measuring cup or jarred container, add the olive oil, lime juice, lime zest, garlic, cumin, salt, pepper and hot sauce and mix or shake until fully incorporated.

  3. Pour the salad dressing over the bean salad and give it a final mix. Garnish it with a few lime wedges and cilantro leaves. Serve and enjoy!


Notes:

  1. Beans - Canned or Dried? : I like using canned beans in this recipe as it's truly a timesaver. You can certainly use dried beans in this recipe and cook them in accordance with package instructions. Be sure to let them fully cool before adding them to your salad.

  2. Love Corn?!: If corn is a fan favourite in your home, go ahead and add 1 cup of cooked corn to this recipe. It adds a little brightness and bulk to this salad!
