On a trip to Finland, I indulged in my fair share of sandwiches. The bakeries and coffee shops were full of beautiful sandwiches (and pastries) - almost too pretty to eat! But, one thing is for certain, the Smoked Salmon Sandwich on Rye Bread, or Kylmäsavulohileivät in Finnish, always made an appearance and for good reason! This simple and humble sandwich highlights fresh and flavourful ingredients and couldn’t be more delicious! Trust me!


To this day, I can’t stop thinking about that sandwich! So, to satisfy my craving, I had to recreate it at home. I present to you my Smoked Salmon Sandwich on Rye Bread recipe. This sandwich starts off with, you guessed it - rye bread! Rye bread is one of more popular, if not most popular, bread varieties in Finland. It’s dark in colour, slightly sour, rich and robust in flavour and dense, yet crumbly in texture. Isn’t that intriguing! Rye bread serves as the base for this sandwich. It houses a generous serving of smoked salmon, hard boiled eggs, mild red onion, fresh leaf lettuce and fragrant dill. A bright and refreshing lemon cream sauce is drizzled over top and takes this sandwich to new heights. The result - one of the most exciting and satisfying bites, that creates a symphony of flavours in your mouth!

Serves: 2 (Makes 2 sandwiches)


Ingredients:


Smoked Salmon Sandwich

  • 4 slices dark rye bread

  • 2 leaves of leaf lettuce, washed and pat dry

  • 8 slices smoked salmon (approx. 93 grams)

  • 1/2 small red onion, peeled and thinly sliced

  • 2 hard boiled eggs, peeled and cut into 1/2 inch slices (See Notes below)

  • 6 fresh dill fronds


Lemon Cream Sauce

  • 1 Tbsp mayonnaise

  • 1 Tbsp sour cream

  • 1/2 Tbsp fresh lemon juice

  • Salt and freshly ground pepper, to taste


Instructions:

  1. Creating the Lemon Cream Sauce: To a small bowl, add the mayonnaise, sour cream, lemon juice, salt and pepper and whisk until fully incorporated. Set aside.

  2. Assembling the Smoked Salmon Sandwich: Lay a slice of rye bread onto a plate. Top it with a piece of lettuce, followed by 4 slices of smoked salmon, 2 slices of red onion and 3 slices of the hard boiled egg.

  3. Drizzle a heaping spoonful of lemon cream sauce over top.

  4. Garnish with 3 dill fronds and top with another slice of rye bread. 

  5. Repeat the process for the second sandwich and serve and enjoy!

Notes:

  1. How to Make Hard Boiled Eggs: Once the water has come to a boil, set the timer to 8 minutes. This will yield perfectly cooked hard boiled eggs, with pale yellow yolks. Check out my Egg Sandwich recipe for step-by-step instructions on how to achieve perfectly hard-boiled eggs!
