Prep Time: 15 minutes

Cook Time: 10 - 12 minutes

Total Time: 25 - 27 minutes

Serves: 8 - 16

Ingredients:

  • 1 lb fresh figs (approx. 16 figs)

  • 1/2 Tbsp olive oil

  • 50g Blue Cheese, cut into 16 pieces (approx. 1/4 inch cubes)

  • 8 slices Prosciutto

  • Freshly ground pepper, to taste

  • 1 Tbsp honey

  • 1 tsp fresh thyme leaves

Instructions:

  1. Preheat the oven to 400F and line a 8” x 8” metal baking pan with parchment paper.

  2. Grab a fig and using a sharp pairing knife cut an “X” into it, ensuring that you only cut 2/3 of the way through. Repeat the process for the remaining figs. Place the cut figs on the baking pan and set aside.

  3. Slice the Prosciutto in half lengthwise and fold it in half. Then, starting at one end, roll it onto itself to form a rose shape.

  4. Stuff each fig with a piece of Blue Cheese and a Prosciutto rose. Brush olive oil over top and season with freshly ground pepper.

  5. Bake for 10 - 12 minutes or until the figs have softened, the Blue Cheese has melted and the Prosciutto is nicely caramelized.

  6. Transfer the Stuffed Figs to a serving platter or plate. Garnish with a drizzle of honey and a sprinkling of fresh thyme. Serve and enjoy!
