Spring is here and who doesn’t love a quick and easy meal idea! Say hello to my Super Simple Arugula Salad - it’s one of the easiest and lightest salad recipes out there! This salad comes together in just 5 minutes and uses a handful of everyday ingredients. Fresh and peppery arugula is tossed in a vibrant and flavourful Lemon & Pecorino salad dressing. That’s it folks! The salad is done and ready to be devoured! Get some salad tongs and dig in!

Serves: 4 - 6


Ingredients:

  • 284g fresh arugula

  • 1/4 cup extra virgin olive oil

  • 1/4 cup freshly grated Pecorino Romano (See Notes below)

  • Juice of 1 lemon (approx. 2 1/2 Tbsp)

  • 1 1/2 tsp Dijon mustard

  • 1 tsp honey

  • 1/4 tsp kosher salt

  • Freshly ground pepper, to taste

  • Shaved Pecorino Romano, as a garnish (See Notes below)


Instructions:

  1. To a large mixing or salad bowl, add the olive oil, grated Pecorino Romano, lemon juice, mustard and honey and whisk until fully incorporated. Season with salt and pepper.

  2. Add the arugula into the bowl and toss until well combined. Garnish with shaved Pecorino Romano and serve and enjoy!

Notes:

  1. Pecorino Romano: I love using Pecorino Romano in this recipe! It’s brighter, more intense and saltier in terms of taste and flavour relative to it’s counterpart, Parmigiano-Reggiano. Nothing quite compares to freshly grated Pecorino Romano! At your local grocer, you’ll find the pre-grated variety, but, I highly recommend buying some Pecorino and grating it yourself. It makes a world of difference. Once you try freshly grated, you’ll never go back!

  2. Shaving Cheese: You can buy shaved Pecorino at your local grocer, but you’ll pay a pretty penny! Shaving cheese at home is pretty easy and, generally more cost effective. Simply grab your Y-vegetable peeler and peel strips of cheese. In just a few seconds, you’ll have fresh and fragrant shaved Pecorino Romano!
