There are plenty of chilis out there…..bean, chicken, turkey, pork and then there’s the one that stands out from the pack - Beef Chili! My beef chili recipe starts off with ground beef, onions, celery, green and red bell peppers, garlic, a handful of smoky, spicy and flavourful spices, beef stock, coffee (you read that correctly), tomatoes and beans. But, what really differentiates my chili from the rest is the time taken to sear the beef until it’s golden brown and the addition of 2 secret ingredients - coffee and cinnamon. These small changes make a world of difference and amp up the flavour of this chili. All the ingredients combine to create a rich, savoury, smoky, spicy, warming and satisfying spoonful! One that will have you and your friends and family screaming - “Touchdown”!

Serves: 8 - 12
Ingredients:
2 1/2 lbs (1.198kg) lean ground beef
4 Tbsp olive oil, divided
1 1/2 tsp kosher salt, divided
1 large yellow onion, finely chopped
4 stalks celery, diced
1 red bell pepper, diced
1 green bell pepper, diced
4 cloves garlic, finely chopped
2 1/2 Tbsp chili powder
1 Tbsp ground cumin
1 Tbsp paprika
1 tsp ground coriander
1 tsp garlic powder
1 tsp chipotle chili powder (See Notes below)
Pinch of ground cinnamon
1 cup beef stock
1/4 cup strong coffee
3 Tbsp tomato paste
2 796mL (28 fl oz) cans diced tomatoes
2 540mL (19 fl oz) cans red kidney beans, drained and rinsed
1 398mL can black beans, drained and rinsed
A handful of cilantro, sliced green onions and jalapeño, grated cheddar cheese and sour cream, as toppings
Instructions:
While you are preparing all your ingredients, remove the ground beef from the refrigerator and allow it to come to room temperature for 20 minutes.
To a large pot set over medium-high heat, add 1 1/2 Tbsp olive oil, 1/2 the ground beef and 1/2 tsp salt and cook for 5 - 6 minutes or until browned. Using a slotted spoon, transfer the beef to a large bowl and set aside. Repeat the process with the remaining beef. Drain any excess fat from the pot and discard.
Reduce the heat to medium and to the same pot, add the remaining 1 Tbsp olive oil, onion, celery, red and green peppers and the remaining 1/2 tsp salt and sauté for 10 minutes or until softened. Then, add the garlic, chili powder, cumin, paprika, coriander, garlic powder, chipotle chili powder and cinnamon, stir and cook for an additional minute.
Add the beef stock, coffee, tomato paste, diced tomatoes, kidney and black beans and beef and stir until combined.
Bring the mixture to a simmer, cover and reduce the heat to low. Cook for 30 minutes to allow the chili to thicken and for the flavours to meld.
Transfer the Beef Chili into individual serving bowls and garnish with cilantro, green onions, jalapeño, cheddar cheese and a dollop of sour cream. Serve and enjoy!
Notes:
Referee, We Need a Substitution!!: Chipotle chili powder adds a layer of smokiness and heat to this chili recipe. But, if you don’t have any on hand or can’t find it at your local grocer, then have no fear! Simply substitute it with smoked paprika on a 1:1 basis. Smoked paprika adds a similar flavour and heat profile to this dish, making it the perfect substitute.
