Who said veggie sandwiches can’t be fun and exciting?! My ultimate veggie sandwich is full of simple ingredients and really let’s the veggies (and fruit) shine! It couldn’t be easier to make and it comes together in just 5 minutes. Serve it with a bowl of soup, salad or a side of chips and you’ve got yourself a satisfying meal!

Ingredients:
2 slices of rye bread (See Notes below)
1 Tbsp unsalted butter
1/2 Tbsp mayonnaise
1 small tomato, cut into 1/4 inch slices
Pinch of kosher salt
1/2 ripe avocado, cut into 1/4 inch slices
2 slices mozzarella cheese, cut into 1/8 inch slices
1 handful of micro-greens
Instructions:
In a medium skillet, melt 1 Tbsp of butter over medium heat. Once the butter begins to sizzle, lay your rye slices on top. Cook for 1 minute per side or until golden and delicious. Turn off the heat and transfer the toasted slices to a plate.
Season the sliced tomatoes with a pinch of salt.
Top one of the toasted slices with a generous smear of mayonnaise, followed by the sliced tomatoes and avocados, a mound of micro-greens and two slices of mozzarella. Cover with the remaining slice of bread. Serve and enjoy!
Notes:
Substituting the Rye Bread: I love using rye bread in this recipe but you can use whatever sliced bread you have on hand. It’s really dealers choice here! Sourdough, whole wheat, multi-grain, brioche and gluten-free are all wonderful options and work here.
