As a tribute to the Barbie movie, coming to Canadian theatres this week, I decided that it would be fitting to share my Tropical Chia Pudding recipe. I am definitely a little nostalgic. Growing up, I had quite a few Barbie dolls, her dream house and pink Corvette, Barbie t-shirts and my grandmother even bought me a Barbie bedsheet set. Needless to say, and if you haven’t already realized, I was a big fan of Barbie as a kid.
My Chia Seed Pudding is made with coconut milk, chia seeds, vanilla and maple syrup. Mashed pink dragon fruit is added to the mix and gives the pudding the most beautiful and distinct Barbie pink hue. The sweet, tart, creamy and rich pudding is topped with sliced mango, pineapple, more dragon fruit and passion fruit to give you that tropical feel and vibe. Enjoy this pudding for breakfast, as a snack or for dessert! Make it ahead of a busy week and you’ve got yourself a delicious and easy breakfast or snack on the go! Serve and enjoy!

Serves: 4
Ingredients:
1 can (400mL) unsweetened coconut milk
4 Tbsp chia seeds
1 1/2 tsp vanilla extract
2 tsp maple syrup
2 Tbsp pink dragon fruit or pitaya, mashed (optional - for the pink hue)
1 mango, thinly sliced
1 pink dragon fruit or pitaya, cut into 1/2 inch cubes
1/2 pineapple, cut into 1/2 inch cubes
2 passion fruits, pulp and seeds scooped out
Instructions:
To a medium mixing bowl, add the coconut milk, chia seeds, vanilla, maple syrup and mashed dragon fruit. Whisk until combined. Set aside and let it stand for 5 minutes.
After 5 minutes, whisk it again to break up any clumps of chia that may have formed. Then, transfer the chia pudding to an airtight container and refrigerate for at least 3 hours or overnight.
Once set, remove the chia pudding from the refrigerator and portion it out into individual servings. Top with sliced mango, pineapple, dragon fruit and passion fruit (pulp and seeds). Serve and enjoy!
Notes:
Shaken Not Stirred: Before opening up your can of coconut milk, give it a good shake. This will ensure that the coconut cream, that has settled at the top of the can, gets evenly distributed, giving you a smooth and silky coconut milk consistency.
