Layers of fried peameal bacon sandwiched between a soft and buttery brioche bun, sweet and zesty orange marmalade, tangy mustard, fresh vegetables and briny and spicy pickled hot red pepper rings, combine to create a sandwich that is good to the very last bite! It’s savoury, sweet, a little spicy and oh so satisfying! So, start the day with a good sandwich and you’ll be well on your way to having a great day!


Skip classic bacon and try peameal bacon instead! Whether you call it Canadian bacon, back bacon or peameal bacon, one thing is certain - it’s undeniably delicious! Peameal bacon is unsmoked bacon that is wet-cured in a salt and sugar brine. This type of bacon utilizes the lean cut of meat, specifically the centre-cut pork loin. The fat is trimmed and the pork loin is then rolled and coated in a thick layer of cornmeal. Reminiscent of baked ham or pork cutlets, this salty and savoury cut of meat is sure to satisfy your meat cravings!

I fell in love with peameal bacon sandwiches at very early age. My parents first introduced me to this delicious dish during a shopping trip to Toronto’s St. Lawrence Market. Paddington’s Pump Restaurant, located within Toronto’s historic farmer’s market and food hall, is where my love affair with peameal bacon began. This diner-esque joint is a popular breakfast, brunch and lunch destination amongst Torontonian foodies. They are famous for their mile-high, super craveable peameal bacon sandwiches. There, peameal bacon is fried to perfection and served on a Kaiser bun with some fixings! This sandwich is the epitome of happiness in breakfast form and serves as the inspiration for my sandwich recipe!

My Ultimate Peameal Bacon Sandwich couldn’t be easier to make, comes together in 10 minutes and uses a handful of simple and everyday ingredients. Prep Time: 4 minutes

Cook Time: 6 minutes

Total Time: 10 minutes

Serves: 1


Ingredients:

  • 3 slices fully cooked peameal bacon, cut into 1/4 inch slices (approx. 222g)

  • 1 1/2 Tbsp extra virgin olive oil

  • 1 brioche bun

  • 1 1/2 Tbsp orange marmalade

  • 1/2 Tbsp Dijon mustard

  • 1/3 cup Romaine lettuce, thinly sliced

  • 1/2 small red onion, peeled and cut into 1/8 inch slices (approx. 3 pieces)

  • A few pickled hot pepper rings, to taste


Instructions:

  1. Set a cast iron or stainless steel skillet over medium heat. Once hot, add the oil and peameal bacon. Cook for 3 minutes per side of until slightly caramelized. Transfer the peameal bacon to a plate and set aside.

  2. Place the brioche bun onto a large plate. Spread orange marmalade over the bottom bun and mustard over the top bun.

  3. Layer the peameal bacon over the marmalade and top with romaine lettuce, red onions and pickled hot pepper rings. 

  4. Cover with the top bun and serve and enjoy!
