My Zucchini Lasagna is a noodle-free alternative to a traditional lasagna. Prosciutto and Fior Di Latte are sandwiched between 5 delectable layers of thinly sliced zucchini. The lasagna is then topped off with a handful of bread crumbs and grated Parmesan cheese, which when baked, create the most satisfying, flavourful and crispy and crunchy bite.

Serves: 4 - 6
Ingredients:
4 medium zucchini
2 Tbsp olive oil, divided
1/2 tsp Italian seasoning
1/2 tsp garlic powder
200g Prosciutto, thinly sliced (16 slices)
250g Fior Di Latte, cut into 1/4 inch slices and then quartered
1/2 cup bread crumbs
1/4 cup Parmesan cheese, grated
Fresh basil leaves, as garnish
Instructions:
Preheat the oven to 350F and line a 10" by 7” baking dish with parchment paper. Drizzle 1 Tbsp of olive oil over the base of the baking dish.
Using a Y-shape vegetable peeler or mandoline, slice the zucchini thinly.
To a small bowl, add the Italian seasoning and garlic powder and give it a good mix.
Lay 13 slices of zucchini on the bottom of the baking dish, overlapping the zucchini as you go. Sprinkle a 1/4 tsp of the spice mix over the zucchini. Lay 4 slices of prosciutto over top, followed by a 1/4 of the Fior Di Latte pieces, ensuring that the cheese is evenly distributed. Repeat this process 3 more times.
Top off the lasagna with the final 13 slices of zucchini and a generous sprinkling of bread crumbs and Parmesan cheese. Drizzle 1 Tbsp of olive oil over top.
Transfer the baking dish to the oven and bake for 50 minutes or until the crust is golden brown and delicious.
Remove the zucchini lasagna from the oven and let it stand for 15 minutes. Slice into individual portions, garnish with fresh basil, and serve and enjoy!
